For anyone who loves a quick, convenient lunch, today's recipe requires no actual cooking — largely thanks to canned chickpeas. If you have the time and patience to let dried chickpeas rehydrate in a pool of water overnight, you're a better person than me! Because when it comes to any kind of bean, my laziness will turn me toward the canned aisle every time.
Heads-up: This recipe makes 4 servings. If you're preparing it just for yourself, I recommend cutting the ingredients in half.
