(Just make sure to make it the night before, as it needs some time to chill in the fridge to thicken up.) | For the folks who emailed us last week asking for vegan and paleo-friendly recipes, this recipe checks those boxes. You can also make it keto-friendly by skipping the sweetener. | One thing that makes chia seeds unique is their ability to absorb liquid. When you combine them with almond milk, you get a rich, creamy consistency that doesn't feel far off from a traditional tapioca pudding. And it doesn't have to be almond milk.
