Chicken in mushroom sauce with lemony asparagus
When I first saw this recipe, I thought the chicken and mushrooms were sauteed together and drizzled with some sort of quick dressing. Nope! The mushrooms are actually cooked with butter, garlic, and onion before they're combined with chicken broth, thyme, and red wine (which you can absolutely omit). The result: a luxurious, rich sauce for bathing the chicken breast.
Asparagus — sprinkled with lemon juice for brightness — is the main side veggie here, but if you're worried about your urine smelling funky later, you can substitute any other hearty green vegetable!
