Recipe of the Week
Chicken tenders, yogurt dip, and green beans
I will eat practically anything breaded and fried (chicken, fish, jalapeño poppers). But the high temperature and large amount of oil required add a hefty amount of trans fats. This recipe involves baking the sliced chicken breast, so there's no oil involved! It's not a revolutionary idea — and it's not the same as what you'd eat at a restaurant — but if you're trying to be mindful of nutritional value, using your oven (or air fryer) may be a smart choice.
If you're not concerned about dairy, you could substitute Greek yogurt as the base for the herby dip — which will also increase the total protein amount. And not that you need my permission, but if you want to eat everything, including the green beans, with your hands, you have my full support.

KitchenAid Multisided Meat Tenderizer
KitchenAid Multisided Meat Tenderizer
Too often have I been a self-induced victim of cooking cuts of meat with uneven thickness, leaving the entire slab with undercooked and overcooked pieces. That's become much less of an issue now that I use a meat tenderizer to flatten boneless chicken and pork chops. Recently, I discovered that a tenderizer is also a handy (and fun!) tool to crack claws and legs. No more seafood crackers for me!
