If you're the breakfast type, you know that a fast, healthy option can be hard to come by. Well, it doesn't get much quicker than this chia seed pudding, which you could easily throw together in less than a minute. (Just make sure to make it the night before, as it needs some time to chill in the fridge to thicken up.)
For the folks who emailed us last week asking for vegan and paleo-friendly recipes, this recipe checks those boxes. You can also make it keto-friendly by skipping the sweetener.
One thing that makes chia seeds unique is their ability to absorb liquid. When you combine them with almond milk, you get a rich, creamy consistency that doesn't feel far off from a traditional tapioca pudding. And it doesn't have to be almond milk. Any dairy or nondairy milk can work great here.

Don't let the inconspicuous appearance of these tiny, black seeds fool you: Chia seeds are dense in essential nutrients.
The 2 tablespoons included in this recipe will cover your entire daily recommendation for the omega-3 fatty acid alpha-linolenic acid (ALA), which has been linked with reduced inflammation, slowed skin aging, and lower blood sugar levels (in animals). You'll also get a healthy dose of protein, fiber, and antioxidants.
