Brrr, it's cold in here
The first time I came across shirataki noodles was an accident. I was looking for premade baked tofu and happened to see packs of these right next to it. They're made from glucomannan, a type of fiber found in the Asian konjac plant. Some research notes that glucomannan has the potential to help lower cholesterol, blood sugar, and insulin. Plus, they're low in calories and carbs and 100% gluten-free!
One thing to keep in mind before preparing these noodles: They're packed in a funky-smelling liquid. A quick rinse under cold water will remove the odor! Other than that, you can use them right away or cook them however you want.
For today's cold noodle bowl, everything is dressed in a fragrant pesto sauce made with almonds for an extra boost of protein, vitamins, and antioxidants. You have my full permission to slurp loud and proud.

I get excited whenever I buy a rotisserie chicken. That's because I know that eventually I can use the carcass to make my own stock, which always turns out tastier than anything from a box.
