What makes *your* chili the best chili?
When that chili craving hits, this easy Instant Pot beef chili delivers. Browning lean ground beef creates deep, meaty flavor, and the combination of chili powder, cumin, and crushed tomatoes packs a spicy-savory punch. Cumin brings anti-inflammatory benefits along with its earthy, aromatic flavor.
Pinto beans are rich in both vitamins and antioxidants, and their protein and fiber help make each bowl so filling and satisfying. (And heads-up: They don't have to be pintos. Feel free to swap in any of your favorite beans.)
As the chili bubbles away in the corner, you'll have time to prep fresh sides like the lettuce and avocado salad. Cooling cilantro (aka coriander) and creamy sliced avocado make a welcome contrast with this chili's heat.
It's a hearty meal for one but easily scales up to become a crowd-pleaser, served over rice or baked potatoes or enjoyed as-is for a protein-filled bowl. Personally, I'd add an almost equal weight of grated cheese, but that's just me! And if you want all the trimmings, a dollop of yogurt or sour cream is a nice addition.
So there it is: a big, bold, warming, and (most of all) *filling* meal that's easy to make any night of the week.
