This recipe is spicy, comforting, and extremely low effort. Seriously, the only knife work you have to do is thinly slice the scallions for the slaw. You can also cut up a whole head of red or green cabbage — personally, I think a mix of the two would add vibrant color — but the bagged stuff is totally fine here.
The mayonnaise mixed into the slaw provides a cool balance to the heat you'll get from the chili powder and green chiles. But if you have a low tolerance for spiciness, feel free to exclude one or both of them! No judgment here.
So there it is: a big, bold, warming, and (most of all) *filling* meal that's easy to make any night of the week.
