Shawarma-spiced grilled chicken with yogurt sauce

There's so much to love about this recipe. The creamy yogurt marinade seasoned with turmeric, paprika, coriander, and fresh garlic coats each chicken thigh with flavor.
"The yogurt's creamy consistency creates a crust around the grilled chicken shawarma as it caramelizes on the grill," Baraghani writes.
Then you have the vegetables, a downright ingenious combination of fresh cherry tomatoes, cucumber, red onion, mint, lemon juice, and lightly crushed pistachios. It's got fiber, it's got protein, it's got nutrients galore. And once the chicken is done marinating, you can throw it together in 30 minutes.
