| I grew up on a diet that largely consisted of some animal protein and a side of white rice. It was very rare for me to consume a meat-free meal. But in college and early adulthood, I started to learn more about how certain foods made me feel. Eating meat practically every day left me bloated and tired. Now, I try to eat vegetarian throughout the day at least twice a week. | Below, you'll find a curry recipe that makes me (almost) forget that chicken or beef even exists. | Let's get to know the ingredients first! | | | | Slurp, slurp! Just take a look at what some of the key ingredients bring to the table: | | • | | Curry powder is packed with spices like turmeric, coriander, and chili pepper, all of which are anti-inflammatory. It may also help lower blood sugar levels, boost digestive health, and leave you feeling full. | | | • | Cauliflower is very low in calories yet rich in a variety of vitamins and minerals. Consuming this vegetable more regularly may help lower the risk of digestive conditions like constipation, diverticulitis, and inflammatory bowel disease. | | | • | Limes are high in vitamin C, antioxidants, and other nutrients. They may help boost immunity, reduce the chance of heart disease, prevent kidney stones, aid iron absorption, and promote healthy skin. | | | • | Tofu is high in protein and contains all the essential amino acids your body needs. | | This particular recipe calls for a can of light coconut milk. But feel free to go off-script and use the full-fat version. Personally, I think full-fat canned coconut milk is overly villainized. | Yes, it is a calorie-rich food due to its high levels of saturated fat, and yes, some brands may include added sugars, preservatives, and artificial thickeners. But full-fat coconut milk also contains helpful vitamins, minerals, and antioxidants. Plus, it's tastier than the lighter versions. | So, assuming you're not making this recipe every day, grab a can of full-fat deliciousness! | š” Pro tip for you spice enthusiasts: A bit of chili powder or Asian red pepper flakes adds a heated kick to the broth. | | | | Get a Mouthful | | | | | Ceramic Soup Spoons | I refuse — REFUSE — to eat any soup or broth with a regular spoon. This version is found in many Asian restaurants and dining establishments and is the ideal vehicle for big heaps of liquid goodness in every bite. I prefer ceramic options over plastic ones (which feel cheap), though they tend to break more easily if you drop them. But by getting yourself a pack of 12, you'll have plenty of backups stocked in your utensil drawer. | | Every product we recommend has gone through either Healthline's or Optum Store's vetting processes.
