This particular recipe calls for a can of light coconut milk. But feel free to go off-script and use the full-fat version. Personally, I think full-fat canned coconut milk is overly villainized.
Yes, it is a calorie-rich food due to its high levels of saturated fat, and yes, some brands may include added sugars, preservatives, and artificial thickeners. But full-fat coconut milk also contains helpful vitamins, minerals, and antioxidants. Plus, it's tastier than the lighter versions.
