For the dredging process, this recipe calls for almond flour, which is a great gluten-free and low carb choice. Almond flour tends to be pretty expensive, so all-purpose flour is fine to use too.
If you can't find trout, any white fish would probably be a fine substitute. Just be mindful of the filet's thickness — you don't want to overcook this lean protein! *makes a mental note*
