Zucchini pizza bites are *chef's kiss*
We really don't give zucchini enough credit. I mean, could there be a more versatile vegetable? Spiralized zucchini (zoodles) is a great substitute for pasta when you want to cut back on carbs and/or eat more fiber. That same idea applies to this recipe: Instead of finding mini bagels — or trying to make your own from scratch — you just need to slice zucchini into thick disks to use as your "bagels."
The rest of the dish comes together pretty easily. Just add store-bought red sauce and top with cheese and other fixings — olives, pepperoni, whatever you're craving! Once everything is assembled, you just have to broil your veggie-forward bites for a total of 5 to 10 minutes and you're all set! Quick, easy, low carb. Sounds good, right?
