| I'm a big fan of breakfast. When I cook at home, my go-to options are a bowl of oatmeal with chia seeds and berries or a fried egg on an English muffin with avocado. On the rare occasion I get breakfast out, I will almost certainly order the huevos rancheros, if available. Eggs Benedict is a solid backup choice. | But despite my enthusiasm for the first meal of the day, I'll admit that my knowledge of breakfast foods is pretty limited. So today, Annie Hibbs, a registered dietitian, is back to give us a little tour from around the globe to help you and me expand our breakfast horizons. | | | | Happy travels! Think outside the box when planning your breakfast! Anything you'd eat for lunch or dinner is fair game. Breakfast can also be a great way to use leftovers.
Of course, every part of the world approaches the first meal of the day a little differently. Some examples include: - Gallo pinto: This common Costa Rican breakfast is a rice and bean dish with red peppers, onions, and spices served with avocado and cheese. Egg is a common side to this dish but not a requirement!
- Barros luco: In Chile, it's not uncommon to have what we think of as lunch sandwiches for breakfast — like barros luco, which is a hot sandwich with beef and melted cheese.
- Chilaquiles: This traditional Mexican breakfast dish is made with corn tortillas, crema, and cheese, mixed with green or red salsa. You can top it with beans for additional protein and add fruit on the side.
- Tofu pudding: This common Chinese breakfast can be made sweet or savory. Fruit can be a nice addition too.
- Moong dal pancakes: This Indian dish is made with ground moong dal, spices, and herbs. You can add grated paneer to the batter for extra protein and a creamy texture. Serve with mint chutney or yogurt.
- Miso soup: In Japan, many people enjoy miso soup with tofu for breakfast. You could add a side of baked fish or edamame and mixed vegetables.
